Summer doesn’t officially start in Seattle until July 5th. And, friends, we’re nearing my favorite time of the year. It’s cocktails on the deck season in Seattle, where it never gets too hot or too cold and the sunlight lasts until 9pm.
Our friend and master bartender, Damon, is guest bartending for us this month. In addition to creating one of my favorite cocktails (see below) he’s also incredibly knowledgeable about the category of bittersweet digestif traditionally found in Italy called Amaro. Do you have an Amaro on your bar cart? If not, it’s worth the investment. They’re beautiful for sipping and have the deep tones you often find in heavier spirits.
This cocktail combines Amaro Silano, with two types of rum, lime, pineapple and a guava syrup to create my new favorite, sipping on the deck, summer drink. So, friends, without further ado…cheers!
Orasella’s Dripping Sun
Makes 2 Generous Cocktails
1.5oz Plantation 3 Star Rum
1.5oz cachaça
1oz lime
.75oz Amaro Silano
.75oz guava syrup*
1oz coconut milk
6 one inch cubes of fresh pineapple
Ice cubes
Fill a standard sized blender 1/3 of the way full with ice. Add all cocktail ingredients to the blender and whiz until mixture is completely smooth. Pour into a glass and garnish with pineapple leaves, a lime slice and an Orasella cherry.
*Guava Syrup
1 14oz package guava paste, cut into 1 inch cubes
(You can find guava paste at Amazon or a hispanic grocery store)
8oz water
1.5oz Orasella cherry syrup
(what’s left in the jar after you use your cherries)
1.5 teaspoons dried oregano
Combine all ingredients in a sauce pan over medium-low heat. Stir until completely dissolved.
