This cocktail was the subject of Orasella’s recent Instagram post. The video took many takes and cocktails that were made in the process.
I must admit, I drank my fair share of sparkling lavender berry shrubs. Yes, since we’re owning up, I also ran out of bubbly (a key ingredient) halfway through and subbed dry white wine. Also delicious.
Maybe you’re new to cocktails, maybe you don’t like overly boozy drinks or maybe you’re a wine fan and wanting to branch out. If so, this cocktail may become your new favorite. Cheers!
Orasella’s Sparkling Lavender Berry Shrub
Serves 1
1 oz lavender berry shrub*
Top with club soda or dry bubbly, like cava, prosecco or champagne
Orasella cherries to garnish

6 Orasella cherries, roughly chopped
1 pint fresh strawberries, stemmed and halved
1T dried lavender
1.5 cup sugar
1 cup red wine vinegar + 2T good quality balsamic vinegar
Combine fruit, lavender and the sugar in a non-reactive container until evenly coated. Leave in a cool, dark place at least 24 hours, but up to 48, stirring occasionally. Once the sugar has removed the majority of the liquid from the fruit, use a fine mesh strainer to remove the fruit solids from the syrup. Press gently on the fruit bits in the strainer to release the most syrup possible. Save the fruit to spread on your toast. It can live in the fridge for 3-4 days.
Add the balsamic vinegar to the syrup and then slowly add the red wine vinegar, tasting as you go until you've achieved a balance of tang and sweet delicious fruit flavor. Bottle it up and keep in the fridge for up to a month.
